Squash and orange jam with dates

A Sunday-style jam, made with just squash, orange and dates.

Ingredients

  • 500 g (1 lb) winter squash, peeled
  • 200 ml (¾ cup) fresh orange juice
  • 1 cinnamon stick (3 g)
  • 6 Medjool dates (144 g / 5 oz)
  • 1 lemon, zest only (2 g)
  • 1 pinch sea salt (1 g)

Method

  1. Cut the squash into small cubes, about 2 cm (¾ in).
  2. Blend the dates with the orange juice until you have a thick liquid.
