Corn muffins with guava paste

The flavor of sweet Portuguese cornbread, in muffin form

Rico's note: All the charm of an old-fashioned corn cake, just without all the sugar.

Ingredients

  • 140 g (5 oz) fine cornmeal
  • 80 g (2¾ oz) rice flour
  • 70 g (2½ oz) sugar — no added sugar: 100 g erythritol
  • 1 tbsp baking powder (14 g)
  • 2 eggs (100 g / 3½ oz)
  • 120 ml (½ cup) coconut milk
  • 73 g (2½ oz) coconut oil
  • 50 g (1¾ oz) sugar-free guava paste — finely diced

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and prepare 12 muffin cups.
  2. In the blender, blend the eggs, coconut milk, coconut oil and sugar.
