Spoonable beijinhos (Brazilian coconut sweets)
The traditional coconut sweet, made entirely in the blender
Ingredients
- 100 g (3½ oz) coconut milk powder
- 120 ml (½ cup) hot water
- 40 g (1½ oz) unsweetened shredded coconut
- 30 g (1 oz) sugar — no added sugar: 40 g erythritol
- 1 tbsp coconut oil (14 g)
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- In the blender, blend the coconut milk powder, hot water, sugar and coconut oil until very creamy.
- Add the shredded coconut and pulse just to combine.
