Spinach and avocado egg cups

Sunday brunch ready in 25 minutes, creamy and not fried.

Rico's note: Keep Sunday morning simple: whisk everything in a bowl and the air fryer does the rest while you set the table.

Ingredients

  • 4 eggs (200 g / 7 oz)
  • 60 g (2 oz) fresh spinach
  • 1 ripe avocado (200 g / 7 oz)
  • ½ lemon, juice only (15 g / ½ oz)
  • 5 g sesame seeds
  • salt, black pepper and chili flakes, to taste

Method

  1. In a bowl, whisk the eggs with the roughly chopped spinach, salt and pepper until evenly combined.
  2. Grease 4 small molds and divide the mixture among them.
