Make it at night, wake up to breakfast ready

Rico's note: Leave it in the fridge before bed; in the morning, all that's left is to eat it.

Ingredients

  • 240 ml (1 cup) unsweetened almond milk
  • 3 tbsp chia seeds (36 g / 1¼ oz)
  • 1 tbsp sugar (12 g) — to taste; or the same amount of maple syrup; no added sugar: 1 tbsp erythritol (15 g)
  • ½ tsp vanilla flavoring (2 g)
  • 30 g (1 oz) berries — to serve

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In the blender, blend the almond milk, sugar and vanilla so the sugar dissolves completely.
  2. Pour into a jar or bowl.
