Oat and banana pancakes

A fluffy breakfast, sweetened only with banana, made in the air fryer.

Rico's note: When the fridge is nearly empty but you have too many ripe bananas, this is the answer — ten minutes and it's done.

Ingredients

  • 2 ripe bananas, mashed (200 g / 7 oz)
  • 80 g (2¾ oz) oat flour
  • 2 eggs (100 g / 3½ oz)
  • 1 tsp ground cinnamon (3 g)
  • ½ tsp baking powder (2 g)
  • 30 ml (2 tbsp) plant-based milk (oat or almond)
  • 40 g (1½ oz) fresh berries, to serve

Method

  1. Mash the bananas well with a fork and mix with the eggs until smooth.
  2. Add the oat flour, cinnamon, baking powder and plant-based milk.
