Sheet-pan chicken and roasted vegetables

A complete dinner on a single sheet pan, no fuss.

Rico's note: Spread everything out in a single layer on the sheet pan — pile it up and the vegetables steam instead of roasting and go soft.

Ingredients

  • 2 skinless chicken breasts, diced (500 g / 1 lb)
  • 1 medium zucchini, cut into half-moons (200 g / 7 oz)
  • 1 red bell pepper, cut into thick strips (150 g / 5½ oz)
  • 1 medium onion, cut into wedges (150 g / 5½ oz)
  • 1 cup cherry tomatoes (150 g / 5½ oz)
  • 3 tbsp extra-virgin olive oil (30 g / 1 oz)
  • 1 tsp dried oregano (1 g)
  • ½ tsp dried thyme (0.5 g)
  • sea salt and black pepper, to taste

Method

  1. Preheat the oven to 200 °C (400 °F).
  2. In a large bowl, combine the diced chicken, zucchini, bell pepper, onion and cherry tomatoes. Add the olive oil, oregano, thyme, salt and pepper and toss well to coat everything.
