Chicken skewers with zucchini and bell pepper

Colorful skewers ready in half an hour, with no pans to clean.

Rico's note: Pack them as a meal-prep lunch for the office — they're just as good eaten cold.

Ingredients

  • 300 g (10½ oz) chicken breast, diced
  • 1 medium zucchini, sliced into rounds (180 g / 6½ oz)
  • 1 red bell pepper, cut into pieces (150 g / 5½ oz)
  • 1 tbsp olive oil (15 g / ½ oz)
  • 1 tsp dried oregano (1 g)
  • 1 tsp dried thyme (1 g)
  • salt and black pepper, to taste

Method

  1. Cut the chicken, zucchini and bell pepper into pieces of the same size so they cook evenly.
  2. Season everything with the olive oil, oregano, thyme, salt and pepper.
