Garlic and herbes de Provence chicken thighs

Crisp outside, juicy inside, no excess oil.

Rico's note: A Sunday-night dish for when you want something easy that still feels like a proper dinner.

Ingredients

  • 4 boneless, skinless chicken thighs (600 g / 1¼ lb) — about 150 g each
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 4 cloves garlic, minced (12 g)
  • 2 tsp herbes de Provence (2 g)
  • 1 tsp sweet paprika (2 g)
  • ½ lemon (15 g / ½ oz) — juice only
  • salt and black pepper, to taste

Method

  1. Make shallow cuts in the thighs so the marinade soaks in better.
  2. Mix the olive oil, garlic, herbs, paprika, salt, pepper and lemon juice.
