Seitan jardineira (Portuguese garden stew)

The old-fashioned vegetable stew, with seitan for substance.

Rico's note: This jardineira is for when you want something homemade without the fuss — everything goes in the same pot and time does the rest.

Ingredients

  • 280 g (10 oz) seitan, cubed
  • 300 g (10½ oz) potato, diced
  • 200 g (7 oz) carrot, sliced into rounds
  • 150 g (5½ oz) peas — fresh or frozen
  • 150 g (5½ oz) zucchini, diced
  • 200 g (7 oz) canned peeled tomatoes
  • 1 chopped onion (120 g / 4 oz)
  • 2 cloves garlic, minced (10 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 40 ml (2½ tbsp) white wine
  • 1 bay leaf (0.2 g)
  • salt and black pepper, to taste
  • water, as needed

Method

  1. Heat the olive oil in a saucepan and sear the seitan cubes until golden. Set aside.
  2. In the same saucepan, sauté the onion and garlic for 5 minutes. Add the white wine and let the alcohol cook off.
