Roast trout with lemon and aromatics

Whole trout roasted with lemon, garlic and thyme, straight from the oven.

Rico's note: Roasting the trout whole always feels like a more elaborate dinner, but the oven does all the work.

Ingredients

  • 2 whole trout, cleaned and scaled (300 g / 10½ oz) — or 4 fillets
  • 1 lemon, thinly sliced (100 g / 3½ oz)
  • 4 cloves garlic, minced (12 g)
  • 4 sprigs fresh thyme (4 g)
  • 3 tbsp extra-virgin olive oil (30 g / 1 oz)
  • sea salt and black pepper, to taste

Method

  1. Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment paper.
  2. Pat the trout very dry with paper towels. Season inside and out with salt and pepper. If they're whole, make a few diagonal cuts in the skin.
