Roast chicken with lemon and thyme

Marinated and oven-roasted — juicy inside, golden outside.

Rico's note: Leave it marinating before you head out to train — when you get back, just turn on the oven and dinner's taken care of.

Ingredients

  • 4 skinless chicken thighs (480 g / 1 lb)
  • 2 lemons (120 g / 4 oz) — juice and slices
  • 1 sprig fresh thyme (5 g)
  • 4 cloves garlic (12 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and pepper, to taste

Method

  1. Season the chicken thighs with lemon juice, minced garlic, thyme, olive oil, salt and pepper.
  2. Let marinate in the fridge for at least 30 minutes, or up to 2 hours if you have time.
