Orange and coconut pudding with dates

Refreshing, orange-hued, and set in individual molds for the week.

Rico's note: A great way to use up extra oranges from the fruit bowl. It's pretty, tastes like summer, and has not a gram of added sugar.

Ingredients

  • 480 ml (2 cups) fresh orange juice
  • 2 organic oranges, zest only (4 g)
  • 3 tbsp agar-agar powder (24 g / ¾ oz)
  • 300 ml (1¼ cups) coconut milk beverage
  • 5 Medjool dates (120 g / 4 oz)
  • orange slices, for garnish, as needed

Method

  1. Combine the orange juice, zest and coconut milk beverage in a saucepan.
  2. Sprinkle the agar-agar over the top and stir well so it doesn't clump.
