Oat and banana waffles

Banana and oat batter, fluffy inside, golden outside, gluten-free.

Rico's note: On a Sunday these take ten minutes, and there's even a waffle left over for Monday's snack. Don't overmix the batter, or the waffles turn rubbery.

Ingredients

  • 120 g (4 oz) certified gluten-free oat flour
  • 1 ripe banana (120 g / 4 oz) — mashed
  • 1 large egg (50 g / 1¾ oz)
  • 120 ml (½ cup) unsweetened almond milk
  • 5 g baking powder
  • 2 g ground cinnamon
  • 5 ml vanilla extract — optional
  • 1 pinch salt (1 g)
  • cooking spray, as needed for greasing

Method

  1. Mash the ripe banana in a bowl until smooth.
  2. Add the egg, almond milk and vanilla extract to the banana and mix well.
