Light, crunchy meringues sweetened only with date powder.

Rico's note: If you grew up on sugar-laden bakery meringues, give this version a chance — it tastes good too.

Ingredients

  • 4 pasteurized egg whites (132 g / 4½ oz) — at room temperature
  • 1 pinch cream of tartar (1 g)
  • 120 g (4 oz) date powder (date sugar)

Method

  1. Make sure the bowl is completely clean and dry before you start.
  2. Beat the room-temperature egg whites until they form soft peaks.
