Dairy-free lemon cream

Tart, intense and creamy — a wholesome take on lemon curd.

Rico's note: Make this when you have extra lemons in the fridge and want something sweet to cut through a week of eating so much protein.

Ingredients

  • 200 ml (¾ cup) lemon juice
  • zest of 2 lemons (4 g)
  • 4 egg yolks (68 g / 2½ oz)
  • 5 Medjool dates, soaked (120 g / 4 oz)
  • 2 tbsp arrowroot starch (16 g / ½ oz)
  • 3 tbsp coconut oil (30 g / 1 oz)

Method

  1. Blend the dates with the lemon juice until you have a thick liquid.
  2. In a saucepan, off the heat, whisk the egg yolks with the arrowroot starch.
