Coconut ovos moles with dates (Aveiro sweet egg cream)

The convent sweet from Aveiro, made with egg yolks, coconut and dates.

Ingredients

  • 4 egg yolks (68 g / 2½ oz)
  • 200 ml (¾ cup) coconut milk beverage
  • 2 tbsp arrowroot starch (16 g / ½ oz)
  • 6 Medjool dates, soaked (144 g / 5 oz)
  • 1 tsp vanilla extract (5 g)
  • 1 organic lemon, zest only (2 g)

Method

  1. Blend the dates with the coconut milk beverage until you have a thick, smooth liquid.
  2. In a heatproof bowl, whisk the egg yolks with the arrowroot starch until smooth.
