Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Chicken tikka skewers

Classic tikka in skewer form, with no sauce and no pot.

Rico's note: Marinating in yogurt is the trick — the chicken always comes out tender, never dry.

Ingredients

  • 300 g (10½ oz) chicken breast, diced
  • 4 tbsp plain Greek yogurt (60 g / 2 oz)
  • 1 tsp ground turmeric (3 g)
  • 1 tsp ground cumin (2 g)
  • 1 tsp ground coriander (1 g)
  • 1 tsp hot paprika (2 g)
  • 1 tbsp olive oil (10 g)

Method

  1. In a bowl, mix the yogurt, turmeric, cumin, coriander, paprika and olive oil.
  2. Toss the chicken in this marinade and let it sit in the fridge for 20 minutes.
