Chicken meatballs in tomato sauce

Homemade sauce, juicy meatballs, a comforting dinner.

Rico's note: Make a double batch on Sunday and freeze half in individual containers — it saves you at least two dinners in a busy week.

Ingredients

  • 500 g (1 lb) ground chicken
  • 1 egg (50 g / 1¾ oz)
  • 1 onion (150 g / 5½ oz) — half finely chopped for the meatballs, the rest for the sauce
  • 4 cloves garlic (12 g) — chopped, divided
  • 1 tsp oregano (1 g)
  • 1 handful of fresh parsley (10 g) — chopped
  • 600 g (1¼ lb) ripe tomato — crushed
  • 1 sprig fresh basil (5 g)
  • 1 bay leaf (0.2 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and pepper, to taste

Method

  1. In a bowl, mix the ground chicken with the egg, half the finely chopped onion, half the garlic, the oregano and the parsley. Season with salt and pepper.
  2. With slightly wet hands, shape the mixture into walnut-sized balls and set aside.
