Chicken and sweet potato croquettes

Mashed sweet potato and shredded chicken, browned in the air fryer.

Ingredients

  • 150 g (5½ oz) cooked sweet potato
  • 150 g (5½ oz) chicken breast, chopped or shredded (cooked)
  • salt, pepper, paprika and garlic powder, to taste
  • olive oil, as needed
  • 40 g shredded reduced-fat cheese (optional)
  • chopped parsley (optional)
  • yogurt sauce, to serve (recipe in this ebook)

Method

  1. Cook the sweet potato in the microwave for 7 minutes, or in boiling water until soft.
  2. Peel it and mash it with a fork into a purée.
