Carrot and banana baked oats

It tastes like carrot cake, but it's breakfast, served in slices.

Rico's note: The recipe for when there are carrots going limp in the fridge and you're short on time for breakfast.

Ingredients

  • 200 g (7 oz) rolled oats
  • 2 medium carrots, grated (160 g / 5½ oz)
  • 2 very ripe bananas (240 g / 8½ oz)
  • 300 ml (1¼ cups) unsweetened almond milk (or other milk)
  • 2 eggs (100 g / 3½ oz)
  • cinnamon, to taste
  • salt, to taste
  • 120 g (4 oz) nonfat Greek yogurt — optional, protein sauce, not counted in the macros
  • 75 g (2¾ oz) vanilla protein powder — optional, protein sauce, not counted in the macros
  • milk, to taste — optional, protein sauce, not counted in the macros

Method

  1. Preheat the oven to 180 °C (350 °F) and line a baking pan with parchment paper.
  2. In a large bowl, mash the bananas well, add the milk and eggs, and stir until combined.
