Canja (Portuguese chicken soup) with brown rice

A comforting broth with shredded chicken, brown rice and fresh mint.

Rico's note: This is the bowl for cold, gray days, when all you want is something warm and comforting on the table.

Ingredients

  • 2 chicken thighs (300 g / 10½ oz) — remove the skin and bone after cooking
  • 100 g (3½ oz) brown rice
  • 1 carrot (60 g / 2 oz)
  • 1 liter (4¼ cups) homemade chicken broth
  • 1 onion (100 g / 3½ oz)
  • mint leaves, to taste (3 g)
  • 1 tbsp extra-virgin olive oil (10 g)
  • 1 tbsp lemon juice (15 g / ½ oz)
  • salt and pepper, to taste
  • water, as needed — for cooking the chicken

Method

  1. Cook the chicken in salted water for about 20 minutes, until cooked through.
  2. Lift out the chicken, let it cool a little, then remove the bones and shred the meat.
