Avocado toast with poached egg and turmeric

Air fryer toast, smashed avocado and a poached egg on top.

Rico's note: A good breakfast for the day before a hard workout: quick and filling until lunch. Poach the egg in water that's already boiling, with a splash of vinegar — it helps keep the white from spreading.

Ingredients

  • 1 slice whole-wheat or rye bread (35 g / 1¼ oz)
  • ½ ripe avocado (100 g / 3½ oz)
  • 1 fresh egg (50 g / 1¾ oz)
  • 5 ml white vinegar
  • 2 g ground turmeric
  • 1 pinch black pepper (0.5 g)
  • salt, to taste
  • microgreens or fresh cilantro, to taste — optional

Method

  1. Preheat the air fryer to 180 °C (350 °F).
  2. Toast the bread in the air fryer for 4–6 minutes, until crisp.
