Zucchini cannelloni with meat

Zucchini rolls stuffed with meat, with no pasta and no extra carbs.

Rico's note: This replaces the pasta in traditional cannelloni, and once it's baked with cheese, nobody notices the difference.

Ingredients

  • 1 zucchini (200 g / 7 oz)
  • 500 g (1 lb) lean ground beef
  • 100 g (3½ oz) shredded reduced-fat cheese
  • 120 g (4 oz) tomato puree
  • salt, pepper, paprika and garlic powder, to taste

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. Wash the zucchini and cut it lengthwise into thin strips with a knife or a vegetable peeler. Set aside.
