Zucchini almond bagels

Bagel-shaped bread with no wheat flour, ready in 40 minutes.

Rico's note: Pack these bagels in your gym bag when you know you won't have time to stop and eat.

Ingredients

  • 1 medium zucchini, grated (240 g / 8½ oz)
  • 180 g (6½ oz) almond flour
  • 2 large eggs (120 g / 4 oz)
  • 1 tbsp baking powder (12 g)
  • salt, pepper, garlic powder and onion powder, to taste
  • sesame seeds and pumpkin seeds, as needed — optional, for sprinkling, not counted in the macros

Method

  1. Preheat the oven to 190 °C (375 °F) and line a baking sheet with parchment paper.
  2. Grate the zucchini and squeeze out the excess water well with a clean kitchen towel or paper towels.
