Vegetarian black bean chili

A hearty chili of black beans, tomato and bell pepper, with cumin and cilantro.

Rico's note: Make a big pot on Sunday and you've got meals for the week, straight from the glass container. Whatever you don't eat within 4 days goes in the freezer.

Ingredients

  • 300 g (10½ oz) cooked black beans
  • 400 g (14 oz) peeled tomatoes
  • 1 red bell pepper (120 g / 4 oz)
  • 1 onion (100 g / 3½ oz)
  • 2 cloves garlic (6 g)
  • 1 tsp cumin (2 g)
  • 1 tsp sweet paprika (2 g)
  • fresh cilantro, to taste (5 g)
  • 1 tbsp extra-virgin olive oil (10 g)
  • salt and black pepper, to taste

Method

  1. Sauté the chopped onion and garlic in olive oil.
  2. Add the diced bell pepper and sauté for another 5 minutes.
