Tuna-stuffed sweet potato

A complete meal inside a single potato.

Rico's note: The dinner for when you want comfort without standing at the stove for half an hour — the oven takes care of almost everything.

Ingredients

  • 2 large sweet potatoes (500 g / 1 lb) — washed and pricked with a fork
  • 2 cans of tuna in water, drained (160 g / 5½ oz)
  • 1 red onion (50 g / 1¾ oz) — chopped
  • 1 cup cherry tomatoes (100 g / 3½ oz) — halved
  • ⅓ cup cooked corn (50 g / 1¾ oz)
  • 1 handful of fresh parsley (5 g)
  • 1 tbsp olive oil (10 g)
  • black pepper, to taste

Method

  1. Scrub the sweet potatoes well, prick them with a fork and bake at 200 °C (400 °F) for 45–50 minutes, until soft inside.
  2. Meanwhile, mix the drained tuna with the chopped red onion, cut cherry tomatoes, corn and parsley.
