Tomato rice with tofu

Soupy tomato rice (arroz malandrinho), with tofu instead of meat.

Rico's note: Tomato rice is a Portuguese childhood staple, and this version is soupy the way it should be, with the tofu soaking up all the flavor of the sauce.

Ingredients

  • 320 g (11½ oz) carolino rice (or other medium-grain rice), uncooked
  • 320 g (11½ oz) extra-firm tofu, cubed
  • 400 g (14 oz) canned peeled tomatoes, crushed
  • 1 large chopped onion (150 g / 5½ oz)
  • 3 cloves garlic, minced (15 g / ½ oz)
  • 2½ tbsp olive oil (25 g / 1 oz)
  • 10 g chopped fresh parsley
  • 1 bay leaf (0.2 g)
  • salt and black pepper, to taste
  • water, as needed

Method

  1. Cut the tofu into cubes and pat it dry with paper towels. Brown the cubes on all sides in a skillet with a drizzle of olive oil. Set aside.
  2. In the same pot you'll cook the rice in, sauté the onion and garlic in the rest of the olive oil for 5 minutes.
