Stuffed mushrooms with goat cheese and walnuts

Ingredients

  • 4 large portobello mushrooms (320 g / 11½ oz) — stem removed
  • 80 g (2¾ oz) fresh goat cheese
  • 30 g (1 oz) walnuts, roughly chopped
  • 2 tsp fresh thyme (2 g)
  • 1 tbsp olive oil (10 g)
  • 2 cloves garlic, minced (6 g)
  • salt and pepper, to taste

Method

  1. Wipe the mushrooms clean with a damp cloth and remove the stems.
  2. Brush them inside and out with olive oil and season with salt and pepper.
