Golden cubes, crisp outside and tender inside, with no deep-frying.

Rico's note: On meat-free days, this stands in for any protein — you just need patience while the tofu drains.

Ingredients

  • 300 g (10½ oz) extra-firm tofu
  • 1 tbsp soy sauce (15 g / ½ oz)
  • 2 tsp sesame oil (10 g)
  • 2 tsp fresh ginger, grated (4 g)
  • 15 g (½ oz) cornstarch
  • 5 g sesame seeds
  • 2 cloves garlic, minced (6 g)
  • chopped chives — optional, to serve

Method

  1. Wrap the tofu in paper towels and put a weight on top for 15 minutes to press out the excess water.
  2. Cut into 2 cm (¾ in) cubes and marinate in the soy sauce, sesame oil, garlic and ginger.
