Tofu cookie dough pancakes

The taste of raw cookie dough, made with nothing but protein-rich ingredients.

Rico's note: A great one for mixing up your protein sources — you can't taste the tofu; it just adds creaminess.

Ingredients

  • 60 g (2 oz) tofu
  • 50 g (1¾ oz) cottage cheese
  • 2 egg whites (60 g / 2 oz)
  • 50 ml (3½ tbsp) almond milk — or another milk of your choice
  • 30 g (1 oz) cookie-flavored oat flour
  • 25 g (1 oz) protein powder — or half a mashed banana
  • salt, to taste
  • 10 g 85% dark chocolate — no added sugar: sugar-free 85% dark chocolate
  • olive oil, for greasing

Method

  1. Put the tofu, cottage cheese, egg whites, almond milk, oat flour and protein powder in the blender jar.
  2. Blend until you have a smooth batter with no lumps.
