Sweet pumpkin cream

A cream of cooked pumpkin, sweetened with dates and flavored with fall spices.

Rico's note: Perfect for pumpkin left over from a roasting pan at dinner — nothing goes to waste and you get a warm dessert.

Ingredients

  • 400 g (14 oz) cooked pumpkin
  • 200 ml (¾ cup) coconut milk beverage
  • 4 Medjool dates (80 g / 2¾ oz)
  • 1 tsp ground cinnamon (3 g)
  • 1 tsp ground ginger (2 g)
  • 1 pinch nutmeg (0.5 g)
  • toasted pumpkin seeds (15 g / ½ oz) — to decorate

Method

  1. Cook the pumpkin until very soft and drain off any excess water well.
  2. Put it in the blender with the dates and the coconut milk beverage.
