Sweet potato wrap with chicken

A baked sweet potato base filled with chicken, cottage cheese and avocado.

Rico's note: All the comfort of the zucchini wrap, with more carbs for after a workout.

Ingredients

  • 1 medium sweet potato (200 g / 7 oz)
  • 60 g (2 oz) shredded reduced-fat cheese
  • salt, pepper and garlic powder, to taste
  • 200 g (7 oz) chicken breast, chopped (cooked)
  • ½ cup cottage cheese (100 g / 3½ oz)
  • 1 avocado (150 g / 5½ oz)

Method

  1. Thinly slice the sweet potato into rounds and arrange them, overlapping, on a baking sheet lined with parchment paper to form 2 rectangles.
  2. Season with salt, pepper and garlic powder, and sprinkle the grated cheese on top.
