Sweet potato mash with shredded chicken
A sweet, creamy mash with poached shredded chicken on top.
Ingredients
- 600 g (1¼ lb) sweet potato, diced
- 500 g (1 lb) chicken breast
- 100 ml (½ cup) reduced-fat milk
- 1 tbsp olive oil (15 g / ½ oz)
- 1 clove garlic (3 g)
- 1 bay leaf (1 g)
- chives, salt and pepper, to taste
Method
- Poach the chicken in water with the bay leaf and garlic for 15 to 18 minutes, until cooked through. Remove it and shred with two forks.
- In the same water (or in another pot), boil the sweet potato for 15 to 18 minutes, until tender.
