Sweet potato burger

The bun swapped for slices of roasted sweet potato.

Rico's note: Roast the sweet potato slices while you work out at home — by the time you're out of the shower, everything's ready to assemble.

Ingredients

  • 2 sweet potatoes (600 g / 1¼ lb)
  • 800 g (1¾ lb) lean ground beef (or other meat)
  • salt, pepper, paprika and garlic powder, to taste
  • a drizzle of olive oil (10 g)
  • 8 slices reduced-fat cheese (120 g / 4 oz)
  • guacamole, red onion and tomato, to taste — optional, for filling, not included in the macros

Method

  1. Cut the sweet potatoes into slices about 1 cm (½ in) thick. Toss with a drizzle of olive oil and the seasonings and bake in a preheated oven at 180 °C (350 °F) for 25 minutes (or in the air fryer at 180 °C (350 °F) for 15 minutes), until tender.
  2. Season the ground beef well with salt, pepper, paprika and garlic powder. Shape into 8 patties.
