Sweet and sour chicken without refined sugar

The sweet-and-sour classic, lighter and with no added sugar.

Rico's note: Apple cider vinegar stands in for ketchup here — you get the same sweet-sour contrast without loading the dish with sugar.

Ingredients

  • 500 g (1 lb) chicken breast, diced
  • 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
  • 1 medium onion, chopped (150 g / 5½ oz)
  • 1 red bell pepper, cut into strips (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1 tbsp fresh ginger, grated (6 g)
  • 200 g (7 oz) diced tomatoes
  • 3 tbsp apple cider vinegar (45 g / 1½ oz)
  • 100 ml (½ cup) unsalted chicken broth
  • fresh cilantro, chopped (optional), to taste (5 g)
  • salt and black pepper, to taste
  • 150 g (5½ oz) fresh pineapple, diced

Method

  1. Heat half the olive oil in a large skillet over medium-high heat. Add the chicken cubes and brown them on all sides. Remove and set aside.
  2. Add the rest of the olive oil to the same skillet. Sauté the onion and bell pepper for 5 minutes, until soft. Add the garlic and grated ginger and cook for 1 more minute, until fragrant.
