Stuffed sweet potato with peanut butter

Rico's note: This is almost a dessert disguised as breakfast — go for the most natural peanut butter you can find, with no sugar.

Ingredients

  • 1 large sweet potato (250 g / 9 oz)
  • 2 tbsp peanut butter (32 g / 1¼ oz)
  • 1 banana (120 g / 4 oz)
  • ground cinnamon, to taste (2 g)
  • 1 tbsp flaxseeds (10 g)

Method

  1. Preheat the oven to 200 °C (400 °F).
  2. Wash and dry the sweet potato and prick the skin with a fork.
