Stuffed chicken roll

Chicken meatloaf rolled up with cheese and spinach in the center.

Rico's note: Make this roll on Sunday, slice it and eat it cold for lunch all week — it keeps really well in the fridge. Whatever you don't eat within 4 days goes in the freezer.

Ingredients

  • 800 g (1¾ lb) ground chicken
  • 2–3 cloves garlic, minced (8 g)
  • 2 eggs (100 g / 3½ oz)
  • 2 egg whites (60 g / 2 oz)
  • salt, pepper, paprika and garlic powder, to taste
  • chopped parsley, to taste
  • 1 handful of spinach (40 g / 1½ oz) — filling
  • 5 slices reduced-fat cheese (100 g / 3½ oz) — filling
  • chopped onion, tomato, carrot and bell pepper, to taste — optional, not included in the macros

Method

  1. In a large bowl, combine the ground chicken with the eggs, egg whites, garlic and seasonings and mix well with your hands until it all holds together.
  2. Preheat the oven to 190 °C (375 °F).
