Split pea soup with mint

Naturally creamy, no cream needed.

Rico's note: Split peas thicken the soup on their own, with nothing extra needed. It's inexpensive plant protein disguised as comfort food.

Ingredients

  • 200 g (7 oz) dried split peas, rinsed — optional: soak for 2 hours beforehand
  • 2 carrots, diced (160 g / 5½ oz)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1 bay leaf (0.2 g)
  • fresh mint, to taste (5 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. If you have time, soak the split peas for 2 hours beforehand — it's not essential, but it helps them cook faster.
  2. Sauté the onion and garlic in the olive oil.
