Roasted tomato and basil soup

A light soup with the concentrated flavor of tomatoes roasted in the air fryer.

Rico's note: The soup for when the fridge has too many tomatoes and you need to use them up before they spoil.

Ingredients

  • 600 g (1¼ lb) ripe tomatoes, halved
  • 1 head garlic, cloves separated, skin on (24 g / ¾ oz)
  • 1 medium onion, quartered (110 g / 4 oz)
  • 200 ml (¾ cup) homemade vegetable broth
  • 100 ml (½ cup) coconut milk
  • 1 handful of fresh basil leaves (10 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. In a bowl, toss the tomatoes, the unpeeled garlic cloves and the quartered onion with half the olive oil, salt and pepper.
  2. Arrange the vegetables in the air fryer basket in a single layer and cook at 190 °C (375 °F) for 15 to 20 minutes, until the tomatoes are soft and lightly caramelized.
