Coconut red lentil soup

A spiced, creamy soup with crispy onion made in the air fryer.

Rico's note: The soup for when you want something different from the usual — ready in just over half an hour.

Ingredients

  • 200 g (7 oz) red lentils, rinsed and drained
  • 1 medium onion, chopped (110 g / 4 oz)
  • 2 cloves garlic, minced (6 g)
  • 15 g (½ oz) fresh ginger, grated
  • 1 tsp ground turmeric (3 g)
  • ½ tsp ground cumin (1 g)
  • 400 ml (1¾ cups) coconut milk (canned)
  • 700 ml (3 cups) homemade vegetable broth
  • 1 tbsp olive oil (15 g / ½ oz) — plus a drizzle for the crispy onion
  • salt and black pepper, to taste
  • 1 small onion, thinly sliced into rings, for the crispy onion (70 g / 2½ oz)
  • 5 g cornstarch (for the crispy onion)
  • fresh cilantro, chopped, to taste

Method

  1. Heat the olive oil in a pot and sauté the onion and garlic until soft.
  2. Add the ginger, turmeric and cumin and cook for 1 minute, until fragrant.
