Pumpkin ginger soup

A creamy soup with crispy croutons made in the air fryer.

Rico's note: Make big pots of this in the fall and freeze it in portions — it becomes the quickest dinner there is for late nights.

Ingredients

  • 500 g (1 lb) pumpkin, cleaned and diced
  • 1 small onion, chopped (70 g / 2½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1 tbsp fresh ginger, grated (6 g)
  • 500 ml (2 cups) homemade vegetable broth
  • 50 ml (3½ tbsp) coconut milk (optional)
  • 2 slices rye bread, for the croutons (60 g / 2 oz)
  • 1 tbsp olive oil (10 g)
  • salt and black pepper, to taste
  • fresh cilantro, chopped, to taste

Method

  1. In a pot with a drizzle of olive oil, sauté the onion and garlic until soft.
  2. Add the pumpkin and ginger and let them cook for 5 minutes, stirring now and then.
