Spinach and chickpea soup

A hearty soup with chickpeas, great for taking to work.

Rico's note: One of the best soups for the week's packed lunches — it's filling and you won't tire of it by day three.

Ingredients

  • 300 g (10½ oz) fresh spinach — washed
  • 200 g (7 oz) cooked chickpeas — drained
  • 2 potatoes (300 g / 10½ oz) — diced
  • 1 onion (150 g / 5½ oz)
  • 3 cloves garlic (15 g / ½ oz)
  • 1.2 liters (5 cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Put the potatoes, onion and garlic in the pot with the water and salt, and simmer for 15 minutes.
  2. Add the washed spinach and let it wilt for 3 minutes.
