Smoked salmon salad with cucumber and arugula

Fresh, elegant and ready in ten minutes.

Rico's note: Not an everyday dish, but when you want to impress on a Friday without any real work, this is the one.

Ingredients

  • 150 g (5½ oz) smoked salmon — thin slices
  • 1 large cucumber (250 g / 9 oz) — thinly sliced into rounds or ribbons
  • 2 handfuls of baby arugula (40 g / 1½ oz)
  • ¼ red onion (30 g / 1 oz) — thinly sliced into rounds
  • 1 tbsp capers (10 g) — optional
  • 1 handful of fresh dill (5 g) — chopped
  • 4 radishes (60 g / 2 oz) — sliced
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 1 lemon, juice only (15 g / ½ oz)
  • 1 tsp Dijon mustard (5 g)
  • black pepper, to taste

Method

  1. Slice the cucumber and the radishes into very thin rounds.
  2. Make the dressing by whisking the olive oil, lemon juice, Dijon mustard and black pepper until emulsified.
