Scrambled eggs with spinach and cherry tomatoes

A light dinner in 12 minutes, with just one skillet to wash.

Ingredients

  • 6 eggs (300 g / 10½ oz) — beaten
  • 2 handfuls of fresh spinach (80 g / 2¾ oz)
  • 10 cherry tomatoes (150 g / 5½ oz) — halved
  • 1 tbsp olive oil (10 g)
  • 1 clove garlic (3 g) — chopped
  • salt and pepper, to taste

Method

  1. Beat the eggs in a bowl with a pinch of salt.
  2. Heat the olive oil in a nonstick skillet and sauté the chopped garlic until fragrant, without burning it.
