Sautéed spinach with poached egg

Simple, quick, with the egg as the sauce.

Rico's note: It's worth learning to poach eggs just for this dish — it takes some practice the first few times, then it becomes second nature.

Ingredients

  • 300 g (10½ oz) fresh spinach
  • 2 fresh eggs (100 g / 3½ oz)
  • 3 cloves garlic (9 g) — sliced
  • 1 tbsp extra-virgin olive oil (10 g)
  • grated nutmeg, to taste
  • salt, pepper and vinegar, to taste

Method

  1. Bring a pot of water to a boil and add a splash of vinegar.
  2. Stir the water with a spoon to create a whirlpool and carefully slide the egg in. Poach for 3 minutes and lift it out with a slotted spoon.
