Salt cod with chickpeas and spinach

A complete Portuguese meal, made entirely in the air fryer.

Rico's note: Make this when you want real Portuguese cooking without spending the whole afternoon in the kitchen.

Ingredients

  • 2 soaked (desalted) salt cod loins (360 g / 12½ oz) — about 180 g each
  • 200 g (7 oz) cooked chickpeas — drained
  • 80 g (2¾ oz) fresh spinach
  • 3 cloves garlic, sliced (9 g)
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 1 tsp smoked paprika (2 g)
  • salt and pepper, to taste

Method

  1. Pat the salt cod dry with paper towels and season with the paprika and pepper.
  2. Mix the chickpeas, spinach, garlic and half the olive oil in a bowl.
