Roasted peppers with canned sardines

A starter or light dinner, ready in half an hour.

Rico's note: Choose sardines in olive oil, not in tomato sauce — that way you control the seasoning and the dish doesn't turn too acidic.

Ingredients

  • 2 large red bell peppers (400 g / 14 oz)
  • 1 can of sardines in olive oil, drained (120 g / 4 oz) — drained weight
  • 2 cloves garlic, thinly sliced (6 g)
  • 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
  • chopped fresh parsley (optional), to taste (5 g)
  • sea salt and black pepper, to taste

Method

  1. Wash the peppers, remove the seeds and cut them into thick strips.
  2. Spread the pepper strips on a baking sheet. Drizzle with a tablespoon of the olive oil and scatter the sliced garlic over them. Season with salt and pepper. Roast in an oven preheated to 200 °C (400 °F) for 20 to 25 minutes, until soft and lightly caramelized.
