Roasted horse mackerel with sheet-pan vegetables

Portuguese fish and seasonal vegetables, all roasted together on one sheet pan.

Rico's note: Horse mackerel is a true Portuguese fish — inexpensive and full of omega-3 — and roasting everything on one sheet pan saves you a pile of dishes at the end of the day.

Ingredients

  • 2 medium horse mackerel, cleaned and gutted (440 g / 15½ oz)
  • 1 lemon, cut into rounds (100 g / 3½ oz) — mostly for aroma
  • 2 tbsp olive oil (20 g / ¾ oz)
  • 1 medium carrot, cut into sticks (60 g / 2 oz)
  • 1 small zucchini, cut into half-moons (150 g / 5½ oz)
  • 1 cup broccoli florets (90 g / 3¼ oz)
  • fresh parsley, oregano or thyme, to taste (3 g)
  • sea salt and black pepper, to taste

Method

  1. Preheat the oven to 180 °C (350 °F). Make three or four diagonal slashes in each horse mackerel and season inside and out with salt and pepper.
  2. Fill the cavity of each fish with lemon slices and a few of the fresh herbs.
