Pistachio-crusted salmon

Golden salmon with a crunchy pistachio and turmeric crust, ready in 23 minutes.

Rico's note: Use this trick whenever you want to make a simple dinner look more polished — the pistachio crust does all the work.

Ingredients

  • 2 salmon fillets, 180 g each (360 g / 12½ oz)
  • 50 g (1¾ oz) shelled pistachios, chopped
  • 1 tsp ground turmeric (3 g)
  • 1 tbsp Dijon mustard (15 g / ½ oz)
  • 1 tbsp olive oil (10 g)
  • 1 lemon, zest only (30 g / 1 oz)
  • salt and black pepper, to taste

Method

  1. Pat the salmon fillets very dry with paper towels and season with salt and pepper.
  2. Spread a thin layer of mustard over the top of each fillet.
